Conscious Creations

On Sunday mornings, it’s hard to find a space in East Cliff Village’s ample parking lot. At the Live Oak farmers market, shoppers clutch juicy white nectarines and sweet peaches along with speckled and striped heirloom tomatoes in shades of red, yellow and green. Happy sunflowers and live bluegrass music creates a festive atmosphere while neighbors catch up on the latest news. Butter lettuce and fresh basil would have to wait as I head toward the Conscious Creations canopy for brunch.

Armed with ice chests and a gas stove, Chef Joshua Server uses all-organic ingredients to deliver an ever-changing weekly repertoire of substantial and wholesome breakfasts. I was intrigued by the Coconut Kahlua Banana Pancakes ($7) with fresh fruit ($2). I drizzled Quebec’s Shady Maple Farm natural organic maple syrup over the three whole wheat pancakes. These hearty muffin-like vegan breads were bulked up with mango passion granola and strawberries. The colorful fruit topping includes strawberries, oranges, four kinds of melon, and crunchy sweet apples. The generous dusting of finely shaved coconut adds tropical flair to this California-Canadian eye-opener.

Conscious Creations also appears Saturdays at the westside farmers market, and will bring its eco-friendly cuisine to parties large and small, from backyard get-togethers to weddings. Chef Joshua also offers Personal Chef services, preparing organic gourmet meals in his kitchen or yours.
