Nuts and Honey

Dining_EvasBaklavaMy first taste of baklava came in the kitchen of a friend's Russian grandmother. She spoke little English, but the message she sent through those infinite layers of sweet, sticky pastry was one of true love.

Numerous peoples claim title to the inception of baklava, but it is believed to be of Central Asian Turkic origin, and perfected by the chefs of Topkapi Palace, home of the Ottoman Sultans in Istanbul. The dessert, popular throughout Greece, Eastern Europe and the Middle East is made by individually buttering micro-thin sheets of dough called phyllo, the Greek word for leaf, which are alternately layered with nuts and spices. After baking they are doused with honey.

My own attempts to prepare what has become my kids' favorite dessert have produced barely edible results. To the rescue comes Scotts Valley's Eva Marie Vaniotis-Tordoff who launched her line of baklava this past summer at select retail establishments. I found packages with two browned and shimmering squares of Eva's Baklava ($2.89) at Shopper's Corner on a baked goods rack back by the kitchen utensils.

Vaniotis-Tordoff, whose grandparents emigrated from Greece, uses organic butter on the many layers of phyllo and fills them with coarsely chopped Santa Clara walnuts sweetened with cinnamon and organic sugar. The flaky, locally handmade squares were soaked in Santa Cruz wildflower honey from Pacific Crest Apiaries and organic lemon juice-infused sugar syrup.

I have had to good fortune of getting to taste Eva's Baklava at a work function. This was my first time having Baklava and it was delicious. I am officially spoiled. I have since tried others and can say that nothing compares to Eva's. You have to taste to believe : )

I have been lucky enough to have a sample of Eva's Baklava. I was so thrilled to see your feature on her delicious treat. By far, it is one of my favorites!! Not only is it this baklava the best I have EVER had but I love that everything is organic, bought locally, and made by hand. You can really taste the difference. Thank you, now I know where I can buy it….I hope they don’t sell out before I can get some!

Leo Sun; Full Moon, Venus Retro in Leo; Saturn Direct

Friday, Venus re-enters Leo (29 degrees, a critical degree) continuing the retrograde to 14 degrees Leo on Sept. 6. Friday (Full Moon) is also the (8 degrees) Leo solar festival, Festival of the Future. Leo is the heart of the sun, the heart of all that matters. When attuned to this heart, we have understanding and inclusivity. The heart of the Lion is Mitra (think “Maitreya,” the coming World Teacher). Leo prepares humanity to receive divine love from subtle sources and later to radiate that love to the kingdoms. Sirius, Ray 2, where love originates, streams through Regulus (heart of Leo), into the heart of the sun (Ray 2) and into all hearts. The heart of Leo is Regulus. Joining Venus, the love underlying all of creation appears. Saturday is Sun/Neptune (confusion or devotion) with late night Saturn turning stationary direct. Ideas, plans and structures held long in abeyance (since March 14) slowly move forward.
